Small discoveries/BIG RESULTS
This has been a fun day of discoveries. Mairead writes from her website/blog, Irish American Mom and shares all things Irish, including some very delicious looking recipes! As a 3rd generation born American from Ireland, I have embraced my heritage and begged for grandmother's recipes, purchased Irish cookbooks, and hunted down authentic Irish food every year. My knight is 100% German, so I have embraced his heritage as well and cook saurbratten, aniseed cookies, stollen, and kartoflglasen in October...and at Christmas. This year I found Mairead and her "Kerry or Irish Apple Cake.....Oh My Goodness! It was fun to make...Mairead doesn't own a pastry cutter, I have 2, but I dug in there in the flour, salt, baking powder and butter to make my dough the rustic way and I didn't get all icky'd out! Actually, I thought the process was a bit quicker and more thorough. The result was a delicious Irish apple cake that looked exactly like Mairead's, except I forgot to take a picture of it before the family dug into it! HA!
Anyway, I wanted to introduce you to my new blogger friend and link up. Her blog will be linked up on the Resources list on the left. I am so happy to meet some neat people with like interests and different experiences that we can learn from.
Mairead has several other recipes I am planning on trying soon, so possibly the Pillars may have to go foodie on you guys!

Ebeth - Thank you so much for trying out my Irish Apple Cake recipe. Your cake looks delicious. So happy to know you had a great St. Patrick's Day. I can't believe Easter will be here in just a few days. Easter blessings to you and your family.
